How can i eat healthy at university?

So im going to collage in about a week and as we cant have anything but a microwave and fridge in our room, the caf is where i must eat. SO ive heard of the freshman fifteen and really want to avoid it....whats really bad about the situation is my collage is in the south(oklahoma, im from canada) and well i went there for a visit and the food was like all fried and such...help
